3 Best Ever Barbeque Burgers
Fire up the barbeque and make 3 of the best ever barbeque burgers for your family and friends for a casual fun get-together. You'll be a definite hit with both adults and children especially if you lay out all the different toppings on platters or boards and let everyone construct their own special burger. An array of burger buns such as sourdough, wholegrain or Turkish rolls always add even more interest.
TOPPING SUGGESTIONS FOR YOUR BURGERS:
• An assortment of salad greens such as wild rocket (arugula), water cress, cos lettuce, baby beet greens, baby spinach leaves
• Fresh or tinned pineapple slices
• Sliced dill cucumbers, beetroot slices
• Spanish onion slices
• Heirloom tomato slices
• Fresh herbs such as coriander, basil or sliced chives
• Fresh or bottled salsa
• Good quality (or homemade) mayonnaise
• Crispy grilled bacon rashers
• Grilled red capsicum or eggplant
• Slices of gouda, Jarlsberg or cheddar cheese
• And of course don't forget the ketchup for all the tomato sauce lovers.
BBQ CHILLI BEEF BURGERS
1 kg lean beef mince
2 eggs (lightly beaten)
1 large onion (diced)
4 large banana chillies (diced) - if you can find them in your area
Or substitute with;
1 medium green capsicum (diced) and 1-2 fresh green chillies (de-seeded & diced)
2 cloves garlic (crushed)
1 tblsp paprika
2 tsp ground black pepper
Sea salt to taste
Thoroughly combine all ingredients in a large bowl, cover and refrigerate for at least an hour. Form into patties, grill on a hot, lightly oiled barbeque. These burgers can be cooked from medium to well done, depending on your preference.
JUICY CHICKEN BURGERS
500g chicken mince
1 cup fresh breadcrumbs
1 egg (lightly beaten)
1 teaspoon smoked paprika
2 garlic cloves (crushed)
2 shallots/green onions (sliced)
1 stalk celery (finely diced)
1 carrot (finely grated)
1 tsp ground black pepper
Sea salt to taste
Thoroughly combine all ingredients in a large bowl, cover and refrigerate. Form into patties, grill on a lightly oiled medium flame barbeque until cooked through. These burgers must be cooked all the way through – any kind of poultry must never be cooked rare.
MEDITERRANEAN TURKEY BURGERS
1 kg turkey mince
1 cup fresh breadcrumbs
1 egg (lightly beaten)
1 medium bulb fennel (finely diced)
2 shallots/green onions (sliced)
2 tsp dried Greek oregano
1 tsp ground black pepper
Sea salt to taste
Thoroughly combine all ingredients in a large bowl, cover and refrigerate. Form into patties, grill on a lightly oiled medium flame barbeque until cooked all the way through.
